Kilishi (Nigerian Beef Jerky)

Kilishi is a spicy beef jerky from northern Nigeria, eaten as a snack. The meat is sliced very thin, so it dries quickly and chews well. Its character comes from the two-stage seasoning: a light salting first, then a paste of ginger, garlic, cloves, cayenne seeds and suya spice rubbed on and baked until the coating clings. It needs only a home oven and a few pantry spices.
Instructions
Sprinkle the salt over the beef and rub it into both sides of every slice.
Spread the slices out on a baking sheet and bake them at 250°C for 15 minutes. Turn the slices every 5 minutes so they dry evenly.
Pound or blend the ginger and garlic together, then scrape the paste into a small bowl. Stir in the stock cube, ground cloves and a little water to loosen it.
Add the cayenne seeds and suya spice to the bowl and mix until the paste is evenly coloured.
Rub the spice paste over the beef slices so each one is coated. Return them to the oven for another 10 to 15 minutes, turning them from time to time.
Take the beef out of the oven once the slices look dry and the coating has set, then serve.
