Vedhmi (Sweet Stuffed Flatbread)

Vedhmi is a sweet stuffed flatbread from Gujarat, also known as puran poli. The filling is toor dal boiled soft, then ground with jaggery and cardamom into a smooth paste, which gives a mild caramel sweetness with a floral edge. Drying the paste over heat keeps it from turning sticky and leaking while you roll. A soft dough and a final brush of ghee finish each poli.
Instructions
Wash the toor dal and boil it in water with half a teaspoon of salt until it is soft enough to mash easily between your fingers.
Let the dal cool a little, then strain it well so that no loose water remains.
Grind the strained dal with the cardamom powder and jaggery into a fine paste. If the paste feels sticky, cook it over heat until it dries out completely. This filling is called puran.
Knead the flour with half a teaspoon of salt and enough water to make a dough that is soft, not hard. Add the oil and knead again until the dough has absorbed it.
Divide the dough and the puran into the same number of balls. Roll each dough ball into a small flat round.
Place a ball of puran in the center of each round, then close the dough around it. Roll the stuffed round out again, as you would for a stuffed paratha, to make a poli.
Heat a griddle and cook each poli on it until done. Brush both sides with ghee and serve.
