A Vegemite sandwich is the quickest salty, savory snack you can make with toast and a jar. The rule that matters is proportion: butter goes on thick, Vegemite goes on thinner, so the yeast spread seasons the toast without taking it over. It turns up in Australian school lunchboxes and at breakfast tables, and a slice of cheese or onion changes it easily.

Instructions

Toast the two slices of bread until they are dry and lightly browned.

Spread butter thickly and evenly over each slice while the toast is still warm. Margarine can stand in for the butter if you prefer.

Spread Vegemite over the butter, using a little less than you did butter, and cover the surface evenly.

Add sliced cheese and sliced onion if you want them. Close the slices together for a lunchbox sandwich, or leave a single slice open for breakfast.
