Vetkoek is a South African fried dough, and this version leans sweet, giving you doughnut-style balls from a handful of pantry staples. The dough is a simple yeasted mix of flour, sugar and salt, kneaded for ten minutes and left to rise for an hour or two. Frying in a pot of oil turns it golden and crisp outside. They are good hot, and just as good cold the next day.

Instructions

Combine the flour, salt, sugar and yeast in a large bowl and stir so the yeast is spread evenly through the dry ingredients.

Pour in the warm water and mix until the ingredients come together into a dough.

Knead the dough for about 10 minutes, until it feels smooth and elastic under your hands.

Place the dough in an oiled bowl and cover it tightly. Leave it to rise for 1 to 2 hours.

Heat the oil in a pot to around 350 to 375°F. Keep an eye on the temperature, because it decides whether the dough fries evenly.

Shape the risen dough into balls and lower them into the hot oil. Fry in batches, since crowding the pot makes the oil temperature drop too far.

Turn the balls regularly until they are golden brown all over and cooked through in the middle.

Serve the vetkoek hot or cold, with a hot or cold drink.
