Waakye (Ghanaian Rice and Beans)

Waakye is a Ghanaian dish of rice and beans cooked together in a single pot. The Guinea corn leaves go into the water before anything else, so the beans and rice simmer in a leaf-infused liquid rather than plain water. It is a common staple in Ghana, and it is rarely eaten alone. Shito, fried tomato stew, tilapia, boiled eggs and salad are the usual companions on the plate.

Instructions

Half-fill a saucepan with water and set it over the heat. Add the washed Guinea corn leaves.

Bring the water to a boil, then add the washed beans.

Lower the heat and simmer the beans for 40 to 45 minutes. They are ready for the next step when they split in two as you touch them.

Stir in the washed rice and the salt. Keep simmering until both the beans and the rice are very soft, adding more water whenever the pot looks dry.

Take the pot off the heat. Serve with shito and fried tomato stew, along with wele, tilapia, boiled eggs and salad.
