Wainar Filawa (Hausa Pancake)
Wainar filawa is a Hausa flour pancake that gets its character from palm oil and a handful of raw vegetables. The name means roughly 'flour pancake', and the batter is just wheat flour, salt and water, so it comes together in minutes. Palm oil stirred into the mix gives the pancake a savory depth and a warm color, while sliced onion and chile or bell pepper add bite and a little sweetness as they cook in the pan.
Instructions
Put the flour and salt in a bowl and mix them together.
Pour in water a little at a time, stirring as you go, until the batter is medium thickness. It should fall from the spoon in a steady ribbon rather than run off like milk or sit in a clump.
Stir in some palm oil, then fold in the sliced onion and pepper so they are spread evenly through the batter.
Heat a frying pan and brush the surface with a small amount of oil.
Pour the batter into the pan and cook until the underside is golden.
Turn the pancake over and cook the second side until it is golden too. Take it off the heat and serve.
