Welsh Fruit Bread (Bara Brith)

Bara brith is a Welsh fruit loaf, and this version gets its character from soaking dried fruit in strong tea for a full day. The fruit swells with liquid, so the loaf stays moist without any butter. Brown sugar, mixed spice and a spoonful of jam add sweetness and warmth, and a honey glaze finishes the top. Slice it plain or serve it with tea.

Instructions

Put the dried fruit in a bowl, pour the brewed tea over it, and leave it to soak for 24 hours. The fruit should look plump and the tea should be mostly absorbed.

Heat the oven to 325°F and prepare a loaf tin.

Add the flour, brown sugar, beaten egg, mixed spice and jam to the bowl with the soaked fruit. Stir everything together into a thick batter with the fruit spread evenly through it.

Spoon the batter into the loaf tin and bake for 45 minutes.

Leave the loaf to cool, then take it out of the tin. Brush the top with honey to give it a glaze.
