Whole Wheat Waffles

These whole wheat waffles get their nutty, hearty character from a full cup of wheat germ stirred in alongside the flour. A tablespoon of nutmeg gives them a warm spice note that plain waffles lack, while only two tablespoons of sugar keep the batter from tasting sweet before the syrup arrives. The batter comes together in one bowl in about ten minutes, which makes a weekend breakfast easy.

Instructions

Heat your waffle iron following the manufacturer's directions, and oil it if it is not nonstick.

In a large bowl, stir together the whole wheat flour, wheat germ, sugar, baking powder, nutmeg and salt until the dry ingredients are evenly mixed.

Pour in the milk and vegetable oil, then add the eggs. Mix until the batter is smooth with no dry pockets of flour.

Pour about 1 cup of batter onto the oiled waffle iron and close it. Cook according to the manufacturer's directions, about 5 minutes per waffle, until the waffle is set and browned.

Serve hot, topped with melted butter and syrup, or spread fruit over the top.
