Yataklete kilkil is a quick Ethiopian vegetable stew that turns a handful of everyday vegetables into a full meal. The base is niter kibbeh, the spiced clarified butter at the heart of Ethiopian cooking, which carries turmeric, ginger and garlic through the carrots, potatoes and cauliflower. Cabbage goes in near the end so it keeps some bite, and a squeeze of lemon sharpens the finish. Serve it with injera for scooping.

Instructions

Melt the niter kibbeh in a large skillet over medium heat.

Add the chopped onion and cook until it turns translucent and soft.

Stir in the garlic, ginger, turmeric, cumin, paprika and salt. Mix well so the onions are coated in the spices.

Add the carrots, potatoes, green beans, cauliflower and broccoli, and stir until everything is coated with the spiced onions.

Cover the skillet and cook for about 15 to 20 minutes, stirring now and then. The vegetables are ready when they are tender but still brightly colored.

Stir in the cabbage and cook for another 3 to 5 minutes, until it has just wilted.

Squeeze the lemon juice over the vegetables and toss once more to mix it through.

Take the skillet off the heat and move the stew to a serving dish. Scatter chopped cilantro or parsley on top and serve hot with injera or rice.
