This is a straightforward yeasted dinner roll made with bread flour, an egg and a modest amount of butter. The high-protein flour gives the rolls a chewy, springy crumb, while the egg and milk keep the inside soft. The dough can be kneaded by hand or left to a bread machine, and it makes a dozen even rolls. A final brush of melted butter gives the tops a soft, glossy finish.

Instructions

Combine all the ingredients in a large bowl and knead them into a single dough. Cover it and leave it to rise for 1 ½ hours. If you have a bread machine, you can instead run the whole mixing and rising stage on its dough setting.

Heat the oven to 350°F (177°C) while the dough finishes rising.

Divide the risen dough into 12 equal pieces and shape each into a roll. Place them on a baking sheet.

Melt a little butter and brush it over the tops of the rolls. Bake for 20 minutes, then serve warm.
