Yeasted Rolls II

Soft milk rolls made from six pantry ingredients and one small bowl of yeast. The dough is enriched with a little melted butter and milk instead of water, which gives a tender crumb and a golden top. Nine balls are baked snugly in a square pan, so they rise into each other and pull apart at the table. Split them warm and the insides stay steamy and soft.
Instructions
Stir the yeast into the lukewarm milk in a small bowl, then add the sugar and let it dissolve.
Sift the flour and salt together into a second bowl, then mix in the cooled melted butter.
Pour the yeast mixture into the flour mixture and turn everything out onto a floured counter. Knead until the dough feels smooth and springs back when pressed.
Put the dough in an oiled bowl, cover it with a clean towel, and leave it in a warm place away from drafts for 45 minutes.
Turn the dough out onto a freshly floured board and divide it into 9 balls. Set them in a buttered and floured 9-inch square pan, cover, and let them rise again for 15 minutes. Preheat the oven to 425°F (220°C) while they rest.
Bake the rolls for 15 to 20 minutes, until they are browned and puffed. Split them open and serve warm.
