Zimtsterne (German Cinnamon Star Cookies)

Zimtsterne are German cinnamon star cookies, traditionally baked for the Advent season. The dough contains no flour at all, only ground almonds or hazelnuts bound with whipped egg white and powdered sugar, which gives a chewy, nutty cookie. A little lemon zest keeps the cinnamon from tasting flat. Part of the meringue-like mixture is saved and brushed on top before baking, so each star finishes with a pale glaze.
Instructions
Whip the egg whites until they are thick and creamy. Sift in the powdered sugar and mix it into the egg whites until smooth.
Set aside almost a third of this mixture to use later as the glaze.
Stir the cinnamon, the ground almonds or hazelnuts and the lemon zest into the remaining mixture. Knead it into a dough.
Roll out the dough and cut out star shapes. Place the stars on a greased baking sheet.
Mix the reserved egg white mixture with rum until it forms a spreadable glaze. Brush it over the stars.
Bake in an oven preheated to 160°C for about 20 minutes.
