Day-old rice, eggs, soy sauce, garlic, and any frozen peas or corn. Scramble the eggs first, push them to one side, fry the rice hard, and add the soy sauce at the end. Ramen Noodles with Boiled Egg

The cheapest dinner on this list. A packet of instant noodles, one egg boiled for six and a half to seven minutes so the yolk stays soft, soy sauce, a little chili sauce, and spring onion if there is any. Pasta aglio e olio

Pasta, olive oil, sliced garlic, red pepper flakes, salt. Cook the garlic slowly in the oil until it turns pale gold, then toss with the drained pasta and a splash of the cooking water. There is no recipe for this one on the site, so treat it as a formula rather than a link. A drained can of tuna and a squeeze of lemon turns the same pan into tuna pasta.

Spicy Arrabiata Penne

The canned-tomato pasta. Spicy Arrabiata Penne is penne, olive oil, garlic, a tin of chopped tomatoes, chili flakes and Italian seasoning, with basil and Parmesan on top if you have them. The sauce cooks in about five minutes once the garlic goes in. If even the garlic is gone, Syrian Spaghetti is built entirely from cans and jars (tomato sauce, tomato puree, cinnamon, oil, salt, pepper) and bakes for an hour, so it is the slow option.

Spaghetti alla Carbonara

Cacio e pepe is the purist's pantry pasta (pasta, butter, black pepper, hard cheese, pasta water) and needs no recipe. Add bacon and egg yolks and you have Spaghetti alla Carbonara, which the site lists at six ingredients: spaghetti, egg yolks, bacon, pecorino, salt and black pepper. Keep the pan off the heat when the eggs go in.

Fettuccine Alfredo

For the night there is cream in the fridge. Fettuccine Alfredo is six ingredients: fettuccine, heavy cream, butter, Parmesan, parsley and black pepper. Warm the cream and butter, whisk in the cheese, toss the pasta through.

Shakshouka

Eggs poached in tomato. The site's Shakshouka is the leanest version at six ingredients, and two of those are salt and pepper: tomato, olive oil, garlic, eggs. Fry the garlic and pepper in a dry pan, add the oil, then the tomatoes, mash them down, make craters, crack in the eggs and cover for five minutes. Canned tomatoes work when there are no fresh ones.

Bread omelette

Two slices of bread, two eggs, salt. That is the whole ingredient list on the Bread omelette page. Beat the eggs with salt, dip the bread, fry in butter until both sides are golden.

Rice and Beans

The site's Rice and Beans is the Caribbean version: kidney beans, a can of coconut milk, an onion, black pepper, salt, and whole scotch bonnets laid on top of the pot while it simmers (they flavour the rice without bursting, then come out before serving). Coconut milk is the pantry item that makes it more than beans on rice.

Vegetarian Chilli

Four ingredients: roasted vegetables, a can of kidney beans, a can of chopped tomatoes and a pouch of mixed grain. The Vegetarian Chilli recipe roasts the vegetables for 15 minutes, adds the beans and tomatoes for another 10 to 15, and microwaves the grain pouch. Spoon it into warm tortillas and it is taco night.

French Lentils With Garlic and Thyme

The dried-lentil pot. French Lentils With Garlic and Thyme is olive oil, onion, garlic, carrot, celery, lentils, thyme, bay and salt, simmered 20 to 25 minutes in water. If the carrot and celery are missing, the onion and garlic carry it. Serve it with a fried egg on top.

Quesadillas

Flour tortillas, cheese, and anything that melts: leftover beans, peppers, last night's chicken. Butter the pan, toast, fold, cut. There is no quesadilla recipe on the site, but the same tortilla-and-cheese logic scaled up is the four-ingredient Chicken Enchilada Casserole: a jar of enchilada sauce, corn tortillas, Monterey Jack and two chicken breasts, for the week there is chicken in the freezer.

What works with almost everything

The spice shelf does more than the fridge

A near-empty fridge and a stocked spice shelf is still a kitchen with options. Cumin pushes beans toward chili. Cinnamon is what makes the Syrian Spaghetti above taste like a dish instead of ketchup pasta. Garlic powder covers for fresh garlic in fried rice. Soy sauce is salt, savour and colour in one bottle.

The spices do not need to be fresh or expensive. They need to be there.

When there is a little more

Butter and an onion make a sauce. Half a tub of cream cheese melted into hot pasta is a fair stand-in for the Alfredo. Sour cream on rice and beans makes it richer.

Stocking for this kind of cooking

Buy the boring things on purpose: rice, dried pasta, instant noodles, canned beans, canned tomatoes, coconut milk, garlic, onions, olive oil, vinegar, soy sauce, salt, and the four or five spices you reach for.
