Abacha Mmiri (Soaked Cassava Flakes)

Abacha mmiri, also called bobozee, is a Nigerian snack made from cassava that has been boiled and then soaked overnight. The soaking is the defining step, and a thorough rinse the next morning clears away the sourness it leaves behind. What remains is mild, tender cassava that takes salt easily. Coconut, palm kernel and roasted groundnuts add chew and richness, so the dish needs no cooking beyond the first boil.
Instructions
Peel the cassava and cut it into slices. Rinse the slices well under running water.
Put the cassava in a pot of water and boil it until it is cooked through.
Transfer the cooked cassava to a bowl of water and leave it to soak overnight.
The next day, rinse the cassava thoroughly to wash away the sour taste that develops during soaking. Drain off all the remaining water.
Season the slices with salt to taste.
Add the coconut, palm kernel and roasted groundnuts, and serve.
