Akarubi (Rwandan Grilled Banana)
Akarubi is a Rwandan dessert of bananas grilled until their sugars darken and the edges char slightly. There is almost nothing to it: ripe fruit, a hot grill and a few minutes on each side. The trick is choosing bananas that are yellow with brown freckles, since those have the most sugar to caramelize. A little cinnamon or honey finishes the plate, but the smoky, soft fruit does most of the work.
Instructions
Heat a grill or grill pan to medium-high. Peel the bananas, choosing ones that are yellow with some brown spots so they are sweet.
If you want to keep the fruit from sticking and help it brown, brush the peeled bananas with melted butter or vegetable oil. Lay them directly on the grates or in the pan.
Grill for 2 to 3 minutes on each side. They are ready when the surface is lightly charred and the flesh has softened.
Lift the bananas onto a serving plate while they are still hot. Sprinkle with cinnamon if you like, and drizzle with honey for extra sweetness. Serve warm as a dessert or a snack.
