Akidi (Nigerian Black Bean Porridge)
Akidi is a black bean porridge from Igbo cooking, and it needs only a handful of ingredients. Soft boiled beans are coated in palm oil, which gives them a deep orange color and a rich, earthy taste. Blended pepper and onion add heat and sweetness in a short final cook. It is traditionally eaten with pap, custard, or garri, so the plain, mild partner balances the spicy beans.
Instructions
Soak the black beans in water, then rinse them well under running water.
Put the beans in a pot with fresh water and boil them for a few minutes, until they are soft.
Drain the beans and return them to the pot. Stir in some palm oil and add salt to taste.
Add the blended pepper and the chopped onions, then cook the mixture for a few more minutes so the flavors come together.
Serve hot with pap or Nigerian custard.
