Apple Streusel Muffins
Apple Streusel Muffins pair a tender, cinnamon-spiced crumb with a buttery brown sugar topping that bakes into crisp clusters. The apple is grated rather than chopped, so it melts into the batter and keeps every bite evenly moist. The streusel takes only minutes to rub together by hand. Eat these warm from the tin, when the topping still has its crunch and the inside is soft.
Instructions
Heat the oven to 400 °F (200 °C). In a mixing bowl, stir together the brown sugar, the ¼ cup of flour and the ½ tsp of cinnamon for the streusel topping.
Work the butter or margarine into that mixture until it looks like coarse crumbs. Set the bowl aside.
In a second large bowl, combine the 1 ½ cups of flour, the 1 ½ tsp of cinnamon, the white sugar, baking powder and salt. Make a well in the center of the dry ingredients.
In a small bowl, beat the egg with the milk and oil, then stir in the grated apple. Pour this into the well and stir only until the flour is just moistened, since a few lumps are fine.
Spoon the batter into standard muffin cups, filling each about three quarters full. Scatter the streusel evenly over the tops.
Bake for 15 to 20 minutes, until the muffins are golden. Serve them while still warm, when they taste best.
