Balangu Jollof (Nigerian Ram and Seasoned Rice)

Balangu jollof is a Nigerian rice dish built around ram meat, eaten among the Hausa and Fulani people. The meat is browned with onion first, so the rice later cooks in a tomato sauce that already tastes of it. Suya spice, the peanut-and-pepper blend used on grilled street skewers, gives the pot a smoky, nutty heat, while thyme and curry powder add a savory backbone. It is a one-pot meal with few steps.

Instructions

Season the ram meat with the chopped onion and salt, making sure the onion is spread through the meat.

Heat the vegetable oil in a pot and fry the seasoned meat, stirring now and then, until it has taken on some color.

Stir in the tomato paste and let it mix with the oil and meat juices. Pour in some water and boil for a few minutes so the flavors blend into a loose sauce.

Add the rinsed rice, then the dried thyme, curry powder and suya spice. Stir well so the rice is coated and the spices are evenly distributed.

Cover the pot and cook until the rice has absorbed all the liquid and is tender. If the liquid is gone but the rice is still hard, add a splash more water and cover again.
