Balangu (Nigerian Spiced Ram Meat)

Balangu is a spiced roast ram meat from northern Nigeria, closely related to suya. Where suya is usually made with beef, balangu uses mutton, which has a stronger flavor that stands up well to black pepper, cayenne and nutmeg. A short parboil before seasoning takes the edge off the meat and gives the spices a clean surface to cling to. Serve it with raw onions.
Instructions
Put the mutton in a pot with a small amount of water and boil it for 2 minutes. Drain it well and let it sit until it is cool enough to handle.
Cut the parboiled meat into pieces of whatever size you like to eat.
Season the pieces to taste with black pepper, cayenne, nutmeg, garlic, crumbled stock cube and salt. The cayenne, nutmeg and garlic are optional, so use as many or as few as you want, and toss until every piece is evenly coated.
Brush the seasoned meat with vegetable oil and roast it in the oven until it is cooked through and browned at the edges.
Serve the roasted meat with onions on the side.
