Bouballe (Sweetened Matzo Meal Omelette)
Bouballe is a sweetened omelette made for Passover, when ordinary flour is off the table. Matzo meal and cornstarch bind the eggs, so the dish needs only four ingredients and one pan. Whipping the whites first gives the omelette a lighter texture than a plain scramble would. Cut it into small squares and sugar them for eating by hand, or pour maple syrup over the top.
Instructions
Separate the eggs and whip the whites until they hold their shape.
Add the yolks to the whipped whites, then stir in the matzo meal and the cornstarch. Mix until everything is evenly combined.
Cook the mixture the way you would an omelette, in a pan, until it is set through.
Sprinkle the cooked omelette with sugar and serve. For finger food, cut it into small squares before you add the sugar.
