Brown Rice with Ground Turkey
Brown rice with ground turkey is a one-wok weeknight dinner that turns leftover cooked rice into a full meal in about 30 minutes. Extra lean turkey breast keeps the dish light, while canned tomatoes with green chiles add moisture and mild heat without any chopping. Frying the rice in oil spiced with allspice, then finishing with a spoonful of teriyaki, gives it a savory, slightly sweet edge that suits a hungry table of four.
Instructions
Spray a skillet with cooking spray and sprinkle in garlic powder and any other seasonings you like. Add the ground turkey and crumble it with a spoon as it cooks.
Stir in the diced tomatoes with green chiles and keep mixing them into the turkey until the meat is cooked through.
Put the vegetable oil in a wok or deep skillet and add 1 teaspoon of allspice and/or other seasonings.
As the pan heats slowly, add the cooked brown rice. Stand back a little, because the hot oil can splatter.
When the rice is heated evenly throughout, add the teriyaki sauce and stir until it coats the rice.
Tip the cooked turkey and tomato mixture into the wok, mix everything thoroughly, and serve.
