Cabbage Fried Rice
Cabbage fried rice is a lighter take on Chinese vegetable fried rice, with more cabbage and less rice in the pan. The cabbage adds bulk and a mild sweetness as it softens, so a small amount of rice goes a long way. It is a sensible use for leftover rice, which fries better when it is a day old, and it needs only a handful of cheap vegetables and one pan.
Instructions
Heat a little vegetable oil in a pan. Add the chopped onion, the minced garlic if you are using it, and the grated carrot, and fry until everything turns golden brown.
Add the chopped green cabbage to the pan and cook for a couple of minutes, until it begins to soften.
Stir in the leftover cooked rice and mix it through the vegetables. Season to taste with salt, and add cumin if you like.
