Char Siu (Asian Barbecued Pork)
Char siu is Chinese barbecued pork, and this version keeps the seasoning down to a short list that anyone can assemble. The cut is sam-chang-bak, pork belly with layers of fat and meat, which stays juicy over a fire. Sugar and store-bought char-siu sauce do the work, so the pork picks up a sweet, sticky glaze as it cooks. Mixing takes only minutes, and then the grill does the rest.
Instructions
Lay the pork out in a large bowl or tray and sprinkle the few drops of tenderizer over the meat.
Add the char-siu sauce, the sugar and some pepper to the pork. Mix everything together with your hands or a spoon until every piece is coated.
