Cheesy Chicken Pasta
Cheesy Chicken Pasta is a quick two-serving dinner that turns leftover cooked chicken into a creamy, savory bowl in about 15 minutes. Three dairy ingredients, cream cheese, mozzarella and cheddar, melt with heavy cream into a thick sauce, while hoisin adds a sweet, salty depth you would not expect. You control how much to add, so taste as you go. Any pasta shape works.
Instructions
Bring a pot of water to the boil. Add the pasta and cook for about 10 minutes, until it is soft.
Drain the pasta well so that no water remains, then return it to the pot.
Add the cream, cream cheese, mozzarella, cheddar, chicken and hoisin sauce to the pasta. Start with the smaller amount of hoisin and add more as you taste.
Cook for a few minutes, stirring now and then, until everything is warmed through and the cheeses have melted into the cream.
Serve straight from the pot while it is hot.
