Nanaimo Bars
Nanaimo Bars are a three-layer chocolate and custard square named for the mining town of Nanaimo, British Columbia. This version won a 1986 contest held by the City of Nanaimo and Harbour Park Mall, submitted by Joyce Hardcastle. The base is cooked with an egg so it sets firm, and the middle gets its flavor from custard powder beaten into butter. Cultured European-style butter is the original's choice.
Instructions
Melt the first amount of butter with the sugar and cocoa in the top of a double boiler, stirring until smooth.
Add the beaten egg and keep stirring over the heat until the mixture cooks and thickens.
Take the pan off the heat and stir in the graham crumbs, coconut and chopped almonds. Press this mixture firmly into an ungreased 8 x 8-inch cake pan to form the base.
Cream the second amount of butter with the cream, custard powder and icing sugar until well combined, then beat until the filling turns light. Spread it evenly over the base.
Melt the chocolate with the remaining 2 tbsp butter over low heat, then let it cool until it is no longer hot but still pourable.
Pour the chocolate over the custard layer and chill in the refrigerator until set. Cut into squares to serve.
