Thai grilled chicken II is a quick marinade-and-glaze recipe built on just a handful of pantry staples. Soy sauce, garlic and cayenne flavor the meat during a short 10 minute soak, so there is no overnight planning. The honey and lime mixture is brushed on only after the first 5 minutes on the grill, which gives the surface a sticky, lightly sweet finish without burning before the chicken cooks through.

Instructions

Get your grill ready for cooking over medium heat. Lay the chicken breast halves in a shallow dish.

Stir the soy sauce, garlic and pepper flakes together in a measuring cup. Pour this over the chicken and turn the pieces so they are coated all over, then leave them to stand for 10 minutes.

While the chicken sits, stir the honey and lime juice together in a small bowl until smooth. Set it aside for later.

Put the chicken on the grid over medium coals and brush each piece with some of the marinade left in the dish. Throw away whatever marinade remains, since it has touched raw chicken.

Cover the grill and cook for 5 minutes. Brush the chicken with half of the honey and lime mixture, turn it over, and brush the other side with the rest.

Keep grilling until the chicken is fully cooked through, with no pink left in the center and the juices running clear.
