Chocolate Sour-Cream Icing

Chocolate sour-cream icing is a quick topping for cake that stays rich without turning cloying. The sour cream is the key: its tang cuts through the sugar and the melted chocolate, and a little salt sharpens the flavor further. You control the result by how much icing sugar you add, so one batch can make a thin glaze for a sheet cake or a thick frosting for layers.
Instructions
Put the chocolate chips and butter in a double boiler and melt them together, stirring until the mixture is smooth.
Take the pan off the heat. Stir in the sour cream, vanilla extract and salt until no streaks of white remain.
Add the icing sugar a little at a time, beating or stirring after each addition. Stop when the mixture reaches the thickness you want: less sugar gives a thinner icing, more gives a thick frosting.
