Confederate Cush
Confederate cush is a one-skillet hash of bacon, beef and cornmeal that fed Southern soldiers during the American Civil War. It relied on ingredients most households already had, and the bacon fat does the work of seasoning and frying at once. The method is flexible: stale cornbread, flour or crumbled hardtack can replace the mush, and extra water turns it into a stew. It also keeps well for later.
Instructions
Put the chopped bacon into a hot iron skillet and fry it until the fat has rendered out and the pieces are cooked through.
Add the cubed cooked beef to the skillet. If you are using the garlic, add it now as well.
Pour in the water slowly, about 4 cups in all, and bring the skillet to a boil.
Add the cornmeal mush and stir until the mixture is dry and no loose liquid remains.
Take the skillet off the heat and let it cool a little. Serve it warm, in the manner of hash.
