Dabeli (Potato-stuffed Buns with Chutney)

Dabeli is a spiced potato sandwich from Kutch in Gujarat, now sold on street corners across Mumbai. A mashed potato filling flavored with dabeli masala sits in a buttered, toasted bun, sharpened with tamarind date chutney and optional garlic chutney. Roasted peanuts, raw onion, sev and pomegranate seeds add crunch and sweetness. It comes together in one pan in minutes, and you can adjust the heat to taste.
Instructions
Heat the oil in a pan, then add the asafoetida, dabeli masala, mashed potatoes, salt to taste and a sprinkle of water. Stir thoroughly until the spices and salt are evenly worked into the potato.
If you are using green chiles, stir them in now.
Take the pan off the heat and taste the filling. For more heat, add a little more dabeli masala and mix again with your hands or a masher. Add the roasted peanuts and mix until they are spread through the filling.
Slice the buns in half and toast the cut sides on a griddle with a little butter.
Spread garlic chutney on the inside of one half of each bun, if using, and tamarind date chutney on the other half.
Set a portion of the potato filling between the two halves. Top it with chopped onion, cilantro and sev.
Press the bun down gently from both sides and garnish with pomegranate seeds, if using, and roasted peanuts.
Serve straight away while still medium-hot, with extra chutney on the plate. Fried green chiles sprinkled with salt make a good side.
