Dambun Shinkafa (Nigerian Rice and Vegetables)
Dambun shinkafa is a northern Nigerian rice dish that turns up at weddings, naming ceremonies and other celebrations as readily as on an ordinary table. Broken rice is steamed until tender, then mixed with lightly fried onion, carrot and peppers, with scotch bonnet for heat. The moringa leaves go in last, so they stay green and soft. Serve it alongside fried meat or fish for a full plate.
Instructions
Rinse the broken rice well under running water until it is clean. You can soak it for a while first if you like.
Steam the rice in a pot or an electric rice cooker until it is moderately soft, tender but not mushy.
Warm a thin layer of vegetable oil in a pot. Add the onion, spring onion, carrot, scotch bonnet and bell pepper, and fry briefly, then take the pot off the heat.
Tip the fried vegetables into the steamed rice and season with salt and the seasoning cube. Cover the pot and let everything steam together for a while so the flavors spread through the rice.
Stir in the washed moringa leaves and remove the pot from the heat. The residual warmth wilts the leaves without cooking them down.
Serve the rice with fried meat or fish.
