Egbo (Nigerian Cornmeal Porridge)

Egbo is a corn porridge from Ibadan, Nigeria, made from nothing more than dried corn, water and salt. The corn is cracked in a mill and the husks are blown away, then cooked until it turns soft and pulpy. A pressure cooker does most of the work of softening the tough kernels. Served with sauce, beans and vegetables, it is known as ororo robo.

Instructions

Crack the dried corn in a mill so the kernels break into coarse pieces. Blow across the cracked corn to carry off the loose husks, leaving only the grain.

Put the cracked corn in a pressure cooker with a pinch of salt and enough water to cover it. Cook under pressure so the hard kernels begin to soften.

Open the cooker and add more water. Keep cooking until the corn is soft and has broken down into a pulpy porridge.
