Falafel Seitan Bratwurst
Falafel seitan bratwurst is a meat-free sausage built from chickpea falafel mix and gluten flour. The falafel mix brings the seasoning and a crumbly, nutty body, while the gluten gives the dough the chew that a sausage needs. A soy sauce and oil liquid adds savory depth, and an optional spoonful of chili powder gives it some bite. It needs only a pan and a pantry shelf.
Instructions
Combine the gluten flour and the chickpea falafel mix in a bowl, using 30 parts gluten flour to 70 parts falafel mix by volume. Stir until the two powders are evenly blended.
Measure out water equal to the volume of the dry mixture plus another 25 percent. Stir the soy sauce and vegetable oil into the water.
Pour the liquid into the dry mixture and work it into a dough. If you like some heat, add chili powder at this stage.
Roll the dough into sausage shapes and fry them in an oiled non-stick pan until cooked through.
If the dough is too runny to roll, squeeze each sausage into shape between two spatulas and fry it on four sides. When you turn a sausage onto its side, press gently from above as well so it keeps a roughly round profile.
