Fattah (Egyptian Layered Bread Dish)
Fattah is an Egyptian layered dish of torn bread, spiced rice and tender meat under a garlicky tomato and yogurt sauce. The bread at the bottom soaks up the sauce and turns soft and savory, so every spoonful holds all three layers. Cumin and paprika season the meat, and fresh parsley and mint add a clean finish. It is often served at festive gatherings and feeds a crowd easily.
Instructions
Heat the oven to 180°C (350°F). Tear the pita or flatbread into bite-sized pieces and spread them in an even layer across the bottom of a baking dish.
In a mixing bowl, combine the cooked rice and the cubed meat. Season with the cumin, paprika, salt and black pepper, then mix well so the spices coat everything evenly.
Spread the rice and meat over the torn bread in an even layer. In a separate bowl, stir together the tomato sauce, yogurt, minced garlic and a pinch of salt.
Pour the tomato and yogurt sauce over the rice and meat so it is covered all the way across. Bake for about 15 to 20 minutes, until the dish is heated through.
Take the dish out of the oven and let it cool for a few minutes. Scatter the chopped parsley and mint over the top and serve warm, either as a main dish or as part of a larger meal.
