Fried pasta turns a pot of plain boiled noodles into something browned, salty and savory in about half an hour. The method is simple: soften onions and garlic in fat, then fry the cooked pasta in the same pan until the edges color. Because it is meant to be salty and oily, you can be generous with both. It also works well for pasta left over from the night before.

Instructions

Boil the pasta in water until it is tender, then drain it and set it aside.

Put a little oil or butter in a pan and heat it over medium heat.

Add the chopped onions and minced garlic to the pan. Cook them until the onions turn transparent and start to brown.

Tip the cooked pasta into the pan and add more oil or butter along with some salt.

Cook the pasta, stirring regularly, until it begins to brown in places.

Taste it and add more salt if it needs it. Let the pasta cool a little in the pan, then serve.
