Grand Union Bacon
Grand Union Bacon is a crisp, breaded bacon strip that works as a snack or a side with eggs. The method is simple: a quick dip in egg spiked with three drops of Tabasco, then a roll in fine cracker dust. Choosing very thin, lean bacon matters, because the coating browns in butter at the same pace the meat cooks through. The result is a crunchy shell with a faint peppery heat.
Instructions
Beat the egg in a shallow bowl with the three drops of Tabasco until the mixture is evenly combined.
Dip each strip of bacon in the egg, then roll it in the cracker dust until it is coated all over.
Melt a little butter in a frying pan over medium heat, and let the pan get well heated before the bacon goes in.
Lay the coated bacon in the pan and fry until the underside is golden brown.
Turn the strips over and cook the second side until it is golden too. Serve on a napkin so it can shed any extra butter.
