Hickory Maple Glazed Wings
Hickory Maple Glazed Wings are deep-fried wings with a cornmeal crust, tossed in a sticky maple and chipotle glaze. The syrup does double duty here, first as the glue that holds the cornmeal on, then as the base of the sauce. A small amount of hickory smoke powder and lemon zest keeps the sweetness in check, and the garlic and hot sauce add a slow, smoky heat.
Instructions
Season the chicken pieces all over with the salt and black pepper. If you are using whole wings, make sure the tips are removed and the wings are split into two pieces first.
Pour some maple syrup into a shallow dish and spread cornmeal out in another. Dip each piece of chicken in the syrup, then press it into the cornmeal until it is evenly coated.
Heat the oil to 350°F. Add the coated chicken pieces and deep fry them for 12 minutes.
Lift the wings out and drain them on a cooling rack so the coating stays crisp rather than steaming underneath.
In a large bowl, stir together the 6 tbsp of maple syrup with the hickory smoke powder, Smoky Chipotle Hot Sauce, minced garlic and lemon zest.
Add the fried wings to the bowl and toss until every piece is coated in the glaze. Serve right away.
