This vegan cheese is built almost entirely from potato, oil and soy sauce, so it needs nothing from a specialty shop. Slightly undercooked potatoes give it a firm body, and the soy sauce supplies the savory depth. Pressed into a small round mold, it turns out looking like a wheel of cheddar. It spreads like peanut butter, and you can season it with garlic, herbs, chili or onion.

Instructions

Boil the potatoes until they are just short of fully cooked. Slightly underdone potatoes give a firmer result that can be sliced, though it will still spread easily.

Mash the potatoes thoroughly, then stir in the soy sauce or yeast extract.

Mix in the margarine or rapeseed oil and some corn flour or breading mixture. The mash is ready when it has the thickness of peanut butter and looks more like cheese than like potato.

Stir in any of the optional seasonings you like, tasting as you go, until the flavor suits you.

Press the mixture into a small round form so it takes the shape of a cheddar wheel. Unmold it and serve.
