Indonesian-style fried rice is a popular dish in Indonesia, and this version is built as a full plate rather than a side. Garlic and fresh red chillies go into the oil first, then prawn or chicken, peas and beansprouts, with scrambled egg folded through the rice. The finish is the best part: a fried egg, fried chicken, satay, pickles and shrimp crackers piled on top for contrasting textures.

Instructions

Heat 2 tablespoons of the oil in a pan and pour in the beaten eggs. Stir until they are scrambled and set, then tip them onto the cooked rice and set aside.

Add the remaining 3 tablespoons of oil to the pan. Fry the crushed garlic and chopped red chillies until the smell turns fragrant.

Add the diced prawn or chicken and cook until the colour changes and the pieces look opaque.

Stir in the green peas, beansprouts and spring onion. Add the rice with the scrambled eggs and cook for 5 minutes, stirring so everything heats through.

Season with the salt, pepper and light soy sauce. Keep cooking until the rice has softened.

Pile the rice onto plates or a platter and top with the sunny-side up egg, fried chicken, mixed pickles, shrimp crackers and chicken satay. Divide into portions and serve.
