Instant Pot Beans
A pot of plain beans cooked from dry is cheaper and better textured than anything from a can, and the Instant Pot makes it a hands-off job. Here the beans cook under pressure with half an onion and three garlic cloves, which flavor the broth without any chopping. Add diced ham if you want a savory edge. Make a batch and use it all week in other bean dishes.
Instructions
Soak the picked-through beans in water for 4 to 12 hours, then drain them. The longer they soak, the less cooking time they need.
Put the soaked beans in the Instant Pot with the 8 cups of water, the peeled half onion, the garlic cloves and the ham, if you are using it.
Seal the lid, close the valve, and set the manual button to 35 minutes. Manual and pressure cook are the same button, named differently on different models.
When the time is up, release the pressure either naturally or with the quick release. Wait until the valve drops before you open the pot, then lift the lid carefully.
Season with salt to taste. Serve the beans as they are or keep them for other recipes that call for cooked beans.
If you are cooking beans that contain phytohaemagglutinin, such as kidney beans, make sure they are cooked through thoroughly to avoid toxicity.
