Kele Ka Halwa (Fried Bananas in Milk)

Kele ka halwa is an Indian banana dessert made from just five ingredients, and the method does the work. Banana slices are fried in ghee until browned, which deepens their sweetness, then folded into milk simmered down until very thick. Toasted cashews and almonds go on last for crunch. It needs no added sugar in the source, so the result tastes of fruit, milk and nuts.

Instructions

Chop the cashews and peeled almonds into small pieces. Fry them in a small amount of the ghee until golden brown, then set them aside.

Pour the milk into a pan and simmer it until it has reduced and become very thick. Set it aside while you cook the bananas.

Peel the bananas and cut them into slices about ¼ inch thick.

Heat the 250 g of ghee in a skillet. Add the banana slices and fry them until they turn brown, then lift them out of the hot ghee.

Stir the fried bananas into the thickened milk and let the mixture cool. Scatter the toasted nuts over the top and serve.
