Khus Khus Halwa
Mango batter turns two slices of bread into a quick, fruit-sweet fried dessert. The mango is blended with milk, a spoonful of sugar and a pinch of cinnamon, so the bread soaks up real fruit rather than plain egg custard. A little maida holds the batter together and helps it brown in the pan. It needs seven ingredients, one blender and a few minutes at the stove.
Instructions
Peel the mango and cut the flesh away from the stone. Put the flesh in a blender with the sugar, milk, vanilla if you are using it, and the pinch of cinnamon.
Blend everything until the mixture is completely smooth, with no fibrous bits of mango left.
Pour the mixture into a wide bowl and add a little of the maida. Whisk well until no dry flour remains and you have a loose batter.
Heat a pan and coat it lightly with oil. Dip each bread slice into the batter so it is soaked on both sides.
Fry the soaked slices in the oiled pan until they are brown on the underside, then turn them and brown the other side. Serve them hot.
