Nilagang Baka (Boiled Beef and Vegetables in Broth)

Nilagang baka is a Filipino boiled beef and vegetable soup that relies on a long, plain simmer rather than a long list of seasonings. Beef ribs give the broth body, while peppercorns and onion keep it clean and savory. The saba, a firm cooking banana, adds a mild sweetness that sets the dish apart from other boiled beef soups. Serve it with rice, and spoon the broth over it.
Instructions
Put the beef ribs, peppercorns, quartered onion, salt, corn and potato in a large pot with enough water to cover, and bring to a boil. Keep it boiling until the beef is tender and pulls easily from the bone.
Cut the onion chives into strips about 3 inches long and add them to the pot with the beef.
Slice each saba in half and add the pieces to the pot as well. The source does not say when to add the cabbage and Chinese cabbage, so add them with the other vegetables and cook until they are soft.
Ladle the beef, vegetables and broth into one large bowl for the table, or into individual bowls. Serve with rice on the side.
