Kipspek (Chickenbacon)
Kipspek is a Dutch snack of chicken cubes wrapped in bacon, breaded and deep fried. The name simply means chickenbacon. The bacon bastes the lean breast meat as it cooks, and the double coating of fine breadcrumbs gives a crisp shell. The half hour of drying before frying is the step that keeps that coating from falling off in the oil. Serve them hot with mustard or ketchup.
Instructions
Season the chicken cubes with salt and black pepper.
Wrap each cube in a strip of bacon. Push a toothpick through from one end to the other so the bacon stays in place and does not unroll.
Roll each skewered piece in the breadcrumbs. Whisk the eggs in a bowl, dip each piece in the egg, then roll it in the breadcrumbs a second time.
Leave the coated pieces to rest for about half an hour so the surface dries out and the coating holds.
Heat the oil in a deep pot. Fry the kipspek until the coating is golden brown all over.
Serve with ketchup or mustard. Pull out the toothpick before you take a bite.
