Liver Kebabs
Liver kebabs are a quick Moroccan grill dish of small marinated cubes, and a good way to get liver onto the plate of someone who thinks they dislike it. The cubes are only 1 cm across, so they take on the paprika, coriander and garlic quickly and cook fast over charcoal. In Moroccan homes they are eaten straight off the grill, with fresh bread and Moroccan salad.
Instructions
Cut the liver into small cubes, about 1 cm on each side, and put them in a bowl or other container.
Add the paprika, a little salt and pepper, the chopped coriander, the minced garlic if you are using it, and the oil.
Mix everything together so the liver is evenly coated, then leave it to marinate for at least 30 minutes.
Thread the cubes onto skewers. Grill them, turning as needed, until they are cooked to the level of char you like.
