Meatloaf
This meatloaf is a simple family dinner of ground beef bound with boxed stuffing mix. The stuffing does the work of breadcrumbs and seasoning at once, soaking up the egg and soy sauce mixture so the loaf stays moist and holds a clean slice. Soy sauce adds a savory depth that plain salt cannot. Everything is mixed by hand in one bowl, and the recipe feeds five or six people.
Instructions
Heat the oven to 350°F (180°C). Beat the eggs, water and soy sauce together in a bowl and set the mixture aside.
Put the ground beef and the dry stuffing mix in a large bowl, along with the diced onion, salt and pepper. Work everything together with your hands until evenly combined, since this step decides how well the loaf holds together.
Add the egg mixture a little at a time, kneading it into the meat until it is fully absorbed and no pockets of dry stuffing remain.
Pack the meat firmly into a loaf shape in your hands and set it in an ungreased loaf pan.
Bake uncovered on the center rack for 45 to 55 minutes, until the center of the loaf is browned.
Tilt the pan to pour off the excess grease from the side. Let the meatloaf stand for 5 to 10 minutes before slicing and serving.
