Meringata di Frutta in Coppa (Meringue with Fruit and Cream)

A meringata in a glass is an easy Italian dessert that needs no oven and almost no cooking. Layers of vanilla pastry cream, fresh fruit and whipped chantilly are topped with crushed meringue cookies, which add a crisp, sugary crunch against the soft cream. The coulis brings a tart edge, and a sprig of mint or basil gives a fresh finish. Shop-bought pastry cream works fine when time is short.

Instructions

Spoon a few tablespoons of vanilla pastry cream into the bottom of a martini or parfait glass.

Cover the cream with your chosen fruit, leaving enough room at the top of the glass for the remaining layers.

Spoon crème chantilly over the fruit, then scatter crumbled meringue cookies on top.

Set a sprig of mint or basil on each glass and drizzle with raspberry coulis or another topping. Serve right away so the meringue stays crisp.
