Middle Eastern Meatballs
These broiled beef meatballs get a cooling garlic and mint yogurt sauce on the side. Cooked brown rice stretches the lean beef and keeps the meatballs tender, while cinnamon, cumin and a pinch of red pepper flakes give them a warm, savory edge. Cilantro and parsley go in by the packed quarter cup, so the herbs are clearly present. Broiling means no pan frying and no splatter, and the whole dish takes about an hour.
Instructions
Whisk the yogurt, garlic and dried mint together in a small bowl. Taste it, add salt as needed, and set the sauce aside.
Place the oven rack 5 inches from the heat source and preheat the broiler.
In a mixing bowl, combine the beef, cooked rice, onion, cilantro, parsley, cinnamon, cumin, red pepper flakes, black pepper and ½ teaspoon salt. Stir with a fork until everything is evenly blended.
With your hands, shape the mixture into meatballs about 1½ inches across. Set them on a baking sheet that fits under the broiler as you go.
Broil the meatballs for 4 to 5 minutes, until the tops are well browned.
Turn them with tongs and cook another 3 to 4 minutes. They are done when the outsides are browned and the centers are no longer pink.
Move the meatballs to a serving plate and serve warm, with the yogurt sauce in a bowl at the table.
