Monte Cristo Sandwich
A Monte Cristo is a triple-decker of ham, chicken and Swiss-style cheese that is dipped in egg and fried in butter until golden. The contrast is the point: salty meat and nutty Emmental inside, a crisp eggy crust outside, and a spoonful of tart currant jelly or cranberry sauce on the side to cut through the richness. Toothpicks keep the layers in place while the sandwich fries, so it comes out of the pan intact.
Instructions
Butter one side of the first slice of bread. Cover it with a layer of ham and a layer of chicken.
Butter the middle slice on both sides and lay it on the meat. Cover it with the Emmental.
Butter one side of the third slice and set it on top of the cheese, buttered side down.
Trim the crusts off the sandwich, then cut it in two and push toothpicks through each half to hold the layers together.
Dip the halves in a light egg batter. Fry them in butter, turning to brown every side, until the outside is golden brown.
Pull out the toothpicks and serve the sandwich with currant jelly, strawberry jam, or cranberry sauce.
