Mozzarella Tuna Melts

Mozzarella tuna melts turn a can of tuna and a few pantry staples into a hot sandwich in about 20 minutes. The celery and onion keep the filling crisp, while mozzarella melts into a mild, stretchy blanket over the top. Adding the lettuce after baking means it stays cool and crunchy against the warm tuna. It is a practical lunch that needs only one bowl and one baking sheet.

Instructions

Heat the oven to 350°F.

In a small bowl, stir together the drained tuna, celery, onion and mayonnaise until the mixture holds together evenly.

Spread the tuna mixture over the bottom half of each split bun.

Lay a slice of mozzarella and a slice of tomato on top of the tuna on each bun.

Set the open sandwiches on an ungreased baking sheet.

Bake for 12 to 15 minutes, until the tuna is heated through and the cheese has melted.

Top each sandwich with a lettuce leaf, then put the bun tops back on and serve.
