Nigerian Beans and Yam
Nigerian beans and yam is a one-pot lunch of tender beans and starchy yam finished with palm oil. The yam goes in after the beans have softened, so both reach the right texture together. The palm oil is stirred in at the end, which gives the pot its orange color and earthy flavor. It is a plain, filling dish made from a few pantry staples.
Instructions
Wash the dried beans, drain them, and put them in a large pot with the chopped onion, the stock cube, and salt and pepper to taste.
Pour in enough water to cover everything and bring the pot to a boil. Cook until the beans are almost soft but still hold a little bite.
Add the yam chunks to the pot. Keep boiling until both the yam and the beans are soft all the way through.
Stir in the palm oil and cook for another 3 minutes so it blends into the beans and yam. Serve while hot.
